Pizza day

Sundays are our pizza making days. We prepare the pastry on Saturday and we leave it to rest until Sunday, when we put the toppings we like and enjoy lunch with home made pizza and beer!

Pizza is originally from Napoli, Italy. Duhh! Who do not know that? Almost all of us we do. Napoleatani are very proud of their pizza making skills and no pizza with chicken and ananas are accepted there. 
Pizza Margherita is the most famous one. It was born in 1899, when Margherita di Savoia was visiting Napoli. This pizza with tomato sauce, mozzarella cheese and basilico was dedicated to her. 
It is simple, looks nice and taste is delicious. 

Here is our favorite recipe. Try it and let us know how did it come out and if you liked it. 

You need: 

500 gr flour type 00 
7 gr fresh yeast 
10 gr olive oil extra vergine
350 gr water
8 gr salt

Toppings:

Mozzarella
Tomato Sauce
Basilico 
+
Whatever you like (mushrooms, tuna, prosciutto...) 

Steps to follow: 

1) Put the flour in the bowl 
2) Dissolve yeast in lukewarm water 
3) Pour the water to the flour, stir
4) Add olive oil and stir
5) Leave the pastry to rest for 30 minutes 
6) Take the pastry and put on the working surface
7) Knead, pulling the pastry towards you and fold it into the four repeat 4 times
8) Put the pastry in the bowl, add bit of oil and cover with plastic film, leave it to rise for about 3 - 16 hrs. 

Sometimes during the kneading process I add more flour, based on the needs. 

8) Time of rising passed, you can work on your pizza. Cut the pastry into 3 pieces. 
9) Take 1 piece and roll out the dough. 
10) Add your toppings, put it into oven in 200-220 degrees for 15 mins.
